Tasting Note

Saint Aix Rosé 2025 is a pale, bone-dry rosé from the Coteaux d'Aix-en-Provence in Provence, built on Grenache with Syrah and Cinsault. Pale salmon in the glass and fermented in stainless steel rather than oak, it is all about clarity of fruit and a clean, dry finish.

The nose is fresh and floral, with watermelon and crushed strawberry leading, then pink grapefruit and a faint herbal lift that suggests dried lavender. Those aromas carry through onto a light-bodied palate of red berries and white peach, with a saline, wet-stone thread running underneath that keeps the fruit honest rather than sweet.

Acidity is the backbone here, bright and linear, and it comes partly from the estate's high-altitude vineyards where the Mistral keeps the fruit cool and healthy. Texture is fine and gently creamy from time on lees, and the finish is dry and mineral with a slight citrus-pith grip that makes you reach for another mouthful.

Serve well chilled, around 8 to 10 degrees, in a decent-sized white wine glass rather than a coupe. Saint Aix Rosé handles food better than most Provence pinks: try it with grilled prawns, salade niçoise, goat's cheese and beetroot, chicken schnitzel, or a spread of charcuterie and olives on a warm afternoon. Drink it through 2026 and into 2027 while the fruit is at its most vivid.
