The Domaine Christian Moreau Père et Fils Chablis AC 2025 is a dry, taut Chardonnay from Chablis in northern Burgundy, built on citrus and chalky minerality rather than richness. It is a classic village-level Chablis: lean, precise and unmistakably cool-climate.
Aromatically the wine leads with lemon peel, green apple and a faint saline, oyster-shell edge, with white blossom and a touch of crushed stone sitting behind. The palate follows the nose closely — grapefruit pith, unripe pear and lemon curd, all carried with real clarity and no excess weight.
Structure is where this Chablis earns its keep. Acidity runs straight through the middle of the wine, firm but not austere, and the texture is fine rather than creamy, with a slightly chalky grip building towards the back palate. The finish is dry and persistent, ending on citrus zest and that mineral snap Chablis is known for.
Serve it well chilled, around 10 to 12°C, and give it a few minutes in the glass to open up. Oysters are the obvious match and a good one, though it works just as well with grilled whiting, prawns with lemon, goat's cheese or a simple roast chicken.
The 2025 is drinking well from release and should hold its shape comfortably for three to five years.
