The Torbreck Woodcutter's Saignée Mataro Rosé 2026 is a pale, bone-dry rosé from the Barossa Valley, made in the saignée style where juice is bled off the skins after brief contact. Mataro gives it more savoury grip than the strawberry-lolly rosés it sits beside on the shelf.
Aromas run to pink grapefruit, watermelon rind and crushed rose petal, with a dusty, almost peppery edge underneath that marks the variety out. The fruit is red rather than tropical — think fresh raspberry and red apple skin.
Bone dry across the palate, with a fine chalky texture and clean acidity holding the line from front to back. There is real length here for a rosé, and the finish is dry and faintly savoury rather than sweet, which is what makes it work as a food wine instead of just an aperitif.
