The Domaine Simha Paysan Eh Bien Pinot Noir 2025 is a light-framed, perfumed red from the Derwent Valley in southern Tasmania, made in a fresh and immediate style rather than a dense one. Pale ruby in the glass, it leads with fruit and florals instead of muscle.
Red cherry, cranberry and a squeeze of blood orange come first, followed by rose petal, crushed herb and a little peppery spice. There is a savoury undertow to the aroma — something between charcuterie and damp earth — that keeps the fruit honest.
The palate is bright and gently sappy, with acidity running clean through the middle and tannins so fine they read more as texture than grip. Weight sits at the lighter end of medium, and the finish is dry, tangy and persistent, closing on sour cherry skin and a whisper of spice.
Serve it with a light chill alongside roast duck, mushroom risotto, a charcuterie board, grilled quail or a plate of salmon with lentils. This Derwent Valley Pinot Noir also handles trickier matches — smoked fish, beetroot, anything with a bit of sweetness and acid working together.
The 2025 is drinking beautifully from release and will be at its most charming over the next three to five years, while the acid line suggests those with patience could hold it a little longer.
