The Boydell's Sangiovese Rosé 2025 is a dry, pale-copper rosé from Orange, NSW, with more savoury grip than the sweeter pink wines it sits beside on the shelf. Sangiovese gives it red fruit and a faintly bitter edge that keeps the wine tasting like a drink rather than a dessert.
Aromatics run to crushed strawberry, pink grapefruit and watermelon rind, with a dried herb lift behind the fruit. The palate is light-bodied and tightly drawn, the cool-climate acidity of Orange holding the red berry fruit in a narrow, bright line.
Texture is chalky rather than creamy, and the finish is dry and a little stony, with that subtle Sangiovese bitterness tightening the tail end. There is enough length here to make the wine interesting on its own, which is not always the case at this end of the colour spectrum.
Pour it with grilled prawns, a tomato and basil salad, jamón, salmon tartare, or a plate of charcuterie and olives on a warm afternoon. Lightly spiced Vietnamese chicken and herb salads also work well against the wine's acidity.
Drink the Sangiovese Rosé 2025 now and through the next 18 months, served cold but not icy so the fruit and texture can show. Rosé of this style is made for freshness, so there is nothing to gain by holding it longer.
